Block Knives are handmade kitchen knives lovingly crafted in Derbyshire, England. I’m Benjamin the chap behind Blok Knives.
I design and craft kitchen knives for the working chef or the budding home cook. Knives are my passion and I love making them! Blok is based in the heart of Derbyshire. Where possible the materials used are supplied by British manufacturers… from packaging to heat treatment its all local.
How are the knives made?
When making something anything a great deal of time has to be spent on the design. This is an on-going process for me and Im always pushing for the best.
The knives are profiled from flat sheets of steel. They then go off to be heat treated. The blades are then ground and wooden handles added with mosaic pins holding them in place. Finally everything gets a good polish.
What are they made of?
I make my knives using two different steels depending on whos going to be using them.
440C Stainless Steel
This steel has good resistance to water and mild acids… amongst otherthings making it perfect for use in a kitchen. 440C is the harder of the 440 range allowing a razor sharp edge. We harden to 58 HRC.
1095 Carbon Steel.
Unlike stainless steel the 1095 doesnt contain any Chromium. This means It can hold and keep a very sharp edge. We harden this steel to 62 HRC. The slight downside? its more likely to rust… it makes a stunning knife but you have to look after it. Youll find this wear resistant steel very simple to sharpen.
Over time this knife will form a Patina on the surface of the blade. This isn’t harmful to the knife it helps protect it from more sinister oxidation/rust.
