If you haven’t seen our latest Course Notes feature, here’s a taste of what you’re missing. A few weeks ago craft journalist Clare Kelly and I spent a delightful morning in the kitchen being taught how to make macaroons by School of Food – the cookery school that comes to you. Clare’s gorgeous photography looks so good, and her vintage china collection proved the perfect backdrop, so I decided our fancy creations deserved a blog post all of their own. This Saturday sees the first ever Fruitcamp run by London-based School of Food. The event is part of a growing movement of ‘foodcamps’ where enthusiasts join together to get hands-on and learn about food production, from field to fork. Scheduled to coincide with the peak of the Kentish cherry season, the day will be spent at Manor House Farm, a family-run fruit farm in Kent. The farm is just 20 minutes by train from St Pancras and fruitcampers will get the chance to sample just how good fresh, locally grown produce tastes. Activities on offer will include jam-making masterclasses, fruit-juicing (with alcoholic infusions!) and baking with fruit, and the day also includes a three course rustic lunch. Here’s a sneak peek at what we’ve been up to for an upcoming Course Notes feature… craft journalist Clare Kelly and I were recently treated to a private cookery lesson in the art of macaroon making, courtesy of School of Food – the cookery school that comes to your home.

Big thanks go to scooter-riding chef Alastair Instone for his knowledge and patience in de-mystifying the techniques required to make macaroons, and to Clare for her beautiful photography (as seen below) and the loan of her gorgeous vintage china collection. For a couple of macaroon novices I think we did rather well! To read the whole story you’ll have to wait until August, but in the meantime why not browse the range of classes available at www.cookeryschool.com?

Maybe it’s the cold weather or perhaps I’ve gone into ‘nesting’ mode, but I seem to have been baking for England recently. Hot on the heels of last friday’s brilliant Traditional British Baking course at The Lighthouse Bakery School for an upcoming Course Notes feature, I was donning my pinny again over the weekend to try out a recipe for Coffee & Walnut Cupcakes, courtesy of Heart of Gold who kindly sent me a bottle of their new 100% natural pure British rapeseed oil.

Grown in the Vale of Belvoir, it’s low in cholesterol, packed full of healthy Vitamin E and Omega 3 and has half the saturated fat of olive oil, making it a heart-friendly alternative. Carried away by the thought of healthy (and therefore surely guilt-free!) cupcakes, I tried out the recipe and can report that the results were deliciously light, moist and tasty…. although my piping skills may need a bit more work! It’s British Sausage Week… and with fireworks night tomorrow what better excuse do you need to celebrate the Great British Banger than around a glowing bonfire, with perhaps a steaming mug of mulled wine on the side?

With this in mind I popped into my local butchers, Armstrong’s in St Margarets, to peruse their sausage list… yes, they have a sausage list! 16 different award-winning, homemade varieties to be precise, from traditional Cumberland and Lincolnshire to the more exotic Creole and Merguez. I settled on a medley of three tasty sounding varieties: Ginger & Leek, Pork & Stilton, and mouthwatering Pork, Caramelised Onion & Cracked Black Pepper. With these beauties on the menu, bonfire night is sure to go with a bang!

As half term draws to a close and with halloween approaching fast, we decided to eschew supermarket pumpkins and instead headed to Garsons Pick-Your-Own Farm in Esher in search of the perfect spooky root veg. Of course, anything involving mud and the wearing of wellies is an instant hit with my four year old son Sam, and he loves the whole process of spotting the perfect vegetable and then pulling it up himself… so much more satisfying than picking up a shrink-wrapped version in the supermarket, and a great day out too! Feeling peckish? Try this recipe…

If like us, you’ll be creating your own carved masterpiece this weekend, I can heartily recommend this quick and easy recipe for Spiced Pumpkin & Coconut Soup. I have to confess a vested interest as it’s from a cookery book written by my clever sister Tonia George, but I’m completely unbiased in saying that it’s quite delicious and perfect for supping on halloween eve after a spot of trick or treating.

Spiced Pumpkin & Coconut Soup

Ingredients: 1kg chopped pumpkin, 1 chopped onion, 1/3 teaspoon dried chilli flakes, 1 tsp coriander, 1 tsp ginger, 4 tbl spns olive oil, 3 garlic cloves, 800ml chicken stock, 100ml coconut milk, 2 tbl spns fish sauce, juice of 1 lime, plus freshly ground black pepper & double cream to serve.

Preheat oven to 200C / 400F / gas 6.

Put pumpkin, onion, chilli, coriander, ginger & oil in a roasting tin & toss. Cover with foil & roast for 40 mins, stirring half way through, until soft.

Remove foil, add garlic & return to oven for 20 mins until tender.

When pumpkin is soft, transfer contents of tin to a blender & liquidise with half the stock until smooth.

Place in a pan & add remaining stock & coconut milk. Bring to the boil & simmer for 10 mins, then stir in lime juice & fish sauce to season.

Divide between 4-6 bowls, drizzle with cream & finish with a grinding of black pepper. Enjoy!
